This chicken and stuffing is made in a junk pot and is great for any meal. Just add cranberry sauce and couple vegetables and you’ll always have Thanksgiving! My family loves this meal and can eat it every day. This recipe is refrigerated for several days and can be reheated in the oven or microwave. If you want to do a lot, you can double the recipe. A great weekday dinner on a busy day.

I make this with a cornbread filling mix, but you can use any kind of thing I like. We love the cornbread dressing, which is our favorite. Our homemade dressing is one of the most popular recipes on this website, but we use boxed fillings for this simple recipe. You can make this with chicken cream, but you can use celery or mushroom cream.
Oven version
You can also make this in the oven. Cover all ingredients in a casserole dish and bake at 350 degrees for 1 hour or until chicken is complete.

Some recipes require green beans and other vegetables for the mix. We love serving this in cranberry sauce. It’s one of our favorites and reminds us of Thanksgiving. Optional ingredients you can add to this recipe are chicken seasonings, chopped celery and tsp of onions. The soup and stuffing mix already contain salt, so we didn’t add any salt, but we could add more if needed.

The chicken and stuffing is a great dish! It can be easily made in a crockpot. Perfect for busy nights.
Sprinkle the chicken with pepper and place the chicken in the bottom of a 3-quart crockpot. Combine the filling with chicken soup and chicken soup cream. Spread it over the chicken in the crockpot.
Cook for 5-6 hours, or at a high of 4 hours, or until chicken is complete. Remove the chicken and shred. Serve with filling. Create approximately 6 servings.
