Homemade ice cream doesn’t have to be complicated, and this churn-free vanilla ice cream proves it with honey. There are no healthy ingredients and special equipment, but it’s easy and elegant treat, smooth, creamy and naturally sweet with golden honey. Condensed milk, refined sugar, authentic ingredients, little patience.

The base creates a light, airy foam that forms the whole egg gently whisks honey and vanilla over the bain marie, creating a light, airy foam that forms the ice cream heart. Once cooled it folds into soft whipped cream and turns into a luscious, mousse-like mixture, freezing to the perfect scoop-friendly texture.

This ice cream has a cozy flavor of real vanilla and a mild sweetness of honey with every bite. It’s rich, not heavy, but simple, but far from boring. Serve it or combine it with fruit, cookies or pie. No matter how much you enjoy it, this version is a reminder that you don’t need a machine or a long list of ingredients to make something truly satisfying.

How to make churn’s vanilla ice cream with honey

I’ll start by creating a Honey-Vanilla base. In a hot bowl, whisk the eggs, honey and whole vanilla until well mixed.

Next, place the bowl on a bain marie (a pot of gentle boiling water). Whisk for 5-7 minutes or until the mixture is pale, thick and slightly warm to the touch.

Remove the bowl from the heat, stir in a pinch of salt and allow the mixture to cool completely to room temperature.

In another bowl, whip the cold whipped cream until a hard peak forms.

Fold the whipped cream gently in batches into a cooled honey vanilla mixture and take care to maintain as much air as possible.

Transfer the mixture to an airtight container, cover and freeze for at least 6 hours or overnight.

2 egg1/4 cup (90g) Good quality honey 2 Small spoons (10g) Vanilla Bean Paste 1/4 Small spoons (1g) Salt1¼ cup (300g) Whipped cream cooled

Instructions

In a heat-resistant bowl, whisk the eggs, honey and whole vanilla until combined.

Place the bowl on a baine marie (water stew pan) and whisk for about 5-7 minutes until the mixture becomes pale, thick and slightly warm (approx. 70-75°C / 160-170°F).

Stir in a pinch of salt, remove from the heat and cool to room temperature.

In another bowl, whip the cold whipped cream until a hard peak forms.

Fold the whipped cream gently in batches into a cooled honey vanilla mixture to keep as much air as possible.

Transfer to an airtight container.

Cover and freeze for at least 6 hours. Ideally overnight.

Serve it or combine it with fruit, cookies or pie.
