Coriander lime coconut rice is flavorful and easy to make! Pre-cooked coconut rice is tossed with coriander, lime rind and juice, and gives it a flavourful, tropical spin with traditional cilantro lime. This recipe produces about 4 cups and serves 8 (1/2 cup) of servings.

Do you love coriander lime lime? Imagine the coconut version!

I’m a coriander lime rice girly, but I also love coconut rice. So why not combine the two? ! The jasmine rice was cooked in coconut milk until soft and fluffy, then tossed with a small amount of coconut oil, fresh, finely chopped cilantro, lime crust and lime juice. Did you say it’s made in a rice cooker? that’s right! If I’m cooking rice, nine out of 10 I’m in a rice cultivation rice cooker. Honestly, it’s one of my favorite appliances. I only made a handful of rice recipes in a pot. Rice pilaf, turmeric rice, saffron rice – because rice cookers are very easy.

To make coriander lime coconut rice:

White Rice – I like to use jasmine rice. Kosher Salt – Enhance the flavor of this dish. Coconut Milk – Gives a flavour, making fluffy, moister rice. Water – I use coconut water, but tap water is fine too. Coriander – lends you a pop of bright, clear, clear herbaceous freshness. Lime – Adds a bright citrus flavor. You will need both the skin and juice. Coconut Oil – Add subtle coconut flavors to prevent rice from becoming sticky.

Rinse the riceRinse the rice

Most rice cookers come with their own specific measuring cups. That being said, use a measuring cup with a rice cooker to measure and add two “cup” rice to the mesh strainer. Rinse with cold water and stir the rice slightly until the water is clear.

Transfer the rice to a rice cooker and add 1 teaspoon of kosher salt.

Pour in a can of 14 oz (1 can of full fat coconut milk).

Pour coconut water or regular waterPour coconut water or regular water

Next, pour 3/4 cup of water. If you have coconut water, use it.

Mix it togetherMix it together

Mix these ingredients together before closing the lid

Then, like a slow cooker, set it up and forget it. Well, at least for about 40 minutes.

Once cooked, the rice should be fluffy and smell incredible.

Add rice to a bowl with coconut oil, chopped coriander and lime skinAdd rice to a bowl with coconut oil, chopped coriander and lime skin

Transfer the cooked coconut rice to a large mixing bowl and add 1/2 A bunch (for large bunches, remove thick stems and discard), 1 lime rind, 1/2 lime juice and 2 teaspoons of coconut oil.

Mix wellMix well

Move to the bowl and serve immediately!

2 cup Jasmine Rice, Or white rice1 Small spoons Kosher salt13.5 Ounce Fully fat coconut milk3/4 cup water, I use coconut water1/2 bundle coriander, Thick stems are discarded and finely chopped1 lime, leather1/2 lime, juice2 Small spoons Coconut oil, It melted

Most rice cookers come with their own specific measuring cups. That being said, use a measuring cup with a rice cooker to measure and add the rice to the mesh strainer. Rinse with cold water and stir the rice slightly until the water is clear.

Transfer the rice to a rice cooker and add kosher salt, full fat coconut milk and water. Mix well. Close the lid on the rice cooker and press the “white rice” button to allow the rice cooker to work.

Transfer the cooked coconut rice to a large mixing bowl and add finely chopped coriander, lime crust, lime juice and teconut oil.

Throw well to combine. Enjoy immediately.
