I’m craving pasta, but there are days when I don’t want to spend hours in the kitchen. That’s when this dish comes to the rescue. I love how everything comes together in one pot. The way the pasta absorbs vegetable soup while cooking makes the sauce even more flavorful, and the touch of chilli flakes gives just the right amount of kick.

For me, creamy tomato and spinach pasta is comfortable in the bowl. It’s a beautiful mix of language, ripe cherry tomatoes, fresh spinach and a creamy sauce made with all-purpose cream, ricotta and Parmesan cheese. I’ve been making this for years and every time I do it I remember that the simplest dishes are the most satisfying. Vegetable soup not only cooks pasta, but also infuses it with flavor. So each bite is delicious even before the sauce is added.

How to cook creamy tomato and spinach pasta in 6 stages
Fry aromatics
Heat the extra virgin olive oil in a large pot over medium heat. Add garlic, onion and red chili flakes. Fry until it smells – I love the smell at this stage, it feels like the already comfortable food is on the way. Add tomatoes
Throw the cherry tomatoes and cook until they are tender and release the juice. This is where the sauce began to naturally develop a flavour. Cook pasta in soup
Pour in the vegetable soup and bring to a boil. Add the ringin, cover and cook until al dente. Cooking pasta directly in soups will result in much more flavor than boiling in regular water. Add green
Stir in the spinach and gently wilt. Fresh spinach cooks quickly, so this step only takes a minute. I’ll make it creamy
Lower the heat and add Nestle’s all-purpose cream, ricotta and Parmesan cheese. Throw the pasta until everything is coated with a silky creamy sauce. Serve and have fun
Transfer to a serving plate. I like to add extra parmesan on top before serving – it makes it even more appealing.

I usually enjoy this pasta with warm garlic bread and a simple green salad. Sometimes made for lunch and paired with sweet tea. It’s light enough during the day, but still fills up enough to stay satisfied until dinner.
Tips for cooking creamy tomato and spinach pasta
Use fresh cherry tomatoes whenever possible. There is a big difference in taste. Do not overcook the spinach. It should remain bright green and fresh. If you want to thin the sauce, add a splash of pasta cooking soup before serving. Parmesan cheese is very salty so after adding cheese, taste and adjust the seasonings.

Creamy tomato and spinach pasta
There are just a few hints of chili flakes, a comfortable pasta dish with ringguin, cherry tomatoes, fresh spinach and a creamy sauce made with all-purpose cream, ricotta and parmesan.
Instructions
Heat the olive oil in a large pot over medium heat. Add garlic, onion and red chili flakes. Fry until it smells.
2 tablespoons of extra virgin olive oil, 5 clove garlic, One onion, 0.5 tsp red chili flakes
Add cherry tomatoes. Cook until tender and release the juice.
1 cup cherry tomato
Pour in the vegetable soup and bring to a boil. Add ringin. Cover and cook, stirring occasionally until pasta is al dente.
3.5 cup vegetable soup, 12 oz ringin
Stir in the spinach and cook until it has withered.
3 cups of spinach
Reduces the heat. Add Nestleol Purpose Cream, Ricotta and Parmesan cheese. Throw until pasta is evenly coated and the sauce is creamy.
250 ml Nestleol Cream, 0.75 cup ricotta cheese, 3 tablespoons of Parmesan cheese
Salt and ground black pepper for flavor and season. Enjoy warm.

Note
Use fresh cherry tomatoes whenever possible. They add natural sweetness and freshness to the sauce. To cook pasta directly in vegetable soup, it is infused with flavor and makes it even tastier on the plate without the need for extra salt. If the sauce is too thick, loosen it with a splash of hot soup or a reserved pasta water. Do not overcook the spinach. Add it just before finishing the dish to keep it bright green and fresh. For a stronger, cheesy flavour, add Parmesan just before serving. You can replace the ricotta with cream or cottage cheese to get a slightly different flavor and texture. If you want extra protein, add grilled chicken, shrimp, or crunchy bacon. This pasta pairs wonderfully with garlic bread and a simple salad for a complete meal.
