If you love heartfelt cooking that’s super easy to make, this cowboy casserole is for you!

Various versions of this casserole can be found online. This is our favorite way. We skipped the cream soup and added tomatoes and green chili. It was a huge hit! This is a very versatile dish and is perfect for cold seasons and tail gating days. It’s a perfect combination, so I recommend going with fried cornbread to it.

Swap and add

You can easily switch to ground beef, ground turkey, chicken, or Italian sausages. Not a fan of green beans, simply use or exclude a different kind. Add more hot sauce, like spicy food. This is a very versatile recipe!

Tip

Place the potatoes at the bottom to get closest to heat and cook faster. This dish also has liquids. Because we love soaking cornbread. If you want less liquid, you may want to drain the tomatoes and skip the soup, but you may need to add a little bit to prevent it from sticking to it.

1 lb Ground beef1 cup Chop onion1/2 cup Chop green Red or yellow sweet pepper3-4 Red potato It’s ironic, cut into bit-sized pieces1 1/2 cup Corn Frozen or fresh1 14.5 oz can of kidney beans, drained1 10 oz can dice green chili and dice tomatoes, do not drain1 14.5 oz can dice tomatoes and do not drain them1/2 Small spoons Black pepper1/2 Small spoons salt2 Small spoons Garlic1/2 Small spoons Chili powder1 Small spoons Worcestershire saucepinch Cayenne or a few drops of hot sauce1/2 cup Water or beef or chicken soup1/2~1 cup Shredded cheese I use taco blends, but you can use whatever you like

Brown ground beef, onions, chili peppers and drainage in a frying pan on the stove.

Place the potatoes at the bottom of a 3 1/2 quart crockpot and sprinkle with corn on top. Add the brown burger with onions and chili peppers on top of the corn and add it along with the kidneys.

In a bowl, combine both cans of diced tomatoes with 1/2 cup of water or soup. Stir in black pepper, salt, garlic, chili powder, Worcestershire sauce, cayenne or hot sauce. Mix well and pour into the contents of the stolen pot.

Cook for 4 hours or low for 6 hours or high until potatoes are complete. Once the casserole is ready to cook, sprinkle with fine cheese, place the top in a crack pot and melt.

This recipe is a bit of soup. Because we love having it with cornbread. If you want less liquid, drain the tomatoes and leave the soup. You may need to add a little liquid to prevent the potatoes from sticking.
Place the potatoes at the bottom and they cook faster and once cook, you can stir everything.
