BBQ Pineapple Chicken Variations
Double the batch. This is completely frozen, making it convenient for future meals. Cooking time remains the same.
Add heat: Add Sriracha or red pepper flakes and stir to add spice.
Go tropical: Add coconut milk near the end for a creamy Hawaiian vibe.
Thicken the sauce: Before serving, combine 1 tablespoon cornstarch and 1 tablespoon water.
Switch up grains: Replace white rice with brown rice, quinoa, or even mashed potatoes. You can also lower the sugar content by using cauliflower rice.
How to save and reheat leftovers
Leftovers can be stored in an airtight container for up to 4 days. Store in the refrigerator. I prefer to add a little more chicken broth and reheat on the stovetop to keep the chicken from drying out.
To freeze, let the chicken cool completely, then store in a freezer-safe container. It can be stored in the freezer for up to 3 months.
