Recipe details

I love how vibrant and delicious this simple Ube ice cream is. From gorgeous purple colours to great flavors and rich textures, this is an easy dessert that will please everyone. I also love that there’s no need to build an ice cream machine. It’s that easy!

Taste: With vanilla tips, Ube has a unique, earthy, slightly nutty flavour. The condensed milk adds a delicious sweetness. Texture: This dessert is completely thick, smooth and creamy. The purple sweet potato powder is thoroughly mixed together, so there are no particles. Time: This takes 10 minutes and takes 5 hours to cool. Ease of Use: This ice cream recipe is very easy. To prepare this treat, no electrical appliances other than the stand mixer are required.

What you need

UBE Ice Cream Ingredients: Heavy whipped cream, vanilla extract, condensed milk, UBE flavor, UBE powder.

Ingredient Notes

Heavy Whipped Cream – To achieve creamy results, it must be at least 36% fat. Condensed milk – sweetened, along with thick and rich, is perfect for its delicious flavor. The ube flavor powder and ube flavor extract give this dessert a unique flavour. Vanilla Extract – Enhances the natural flavor of UBE.

Add-ins and replacements

Alternative Coconut Milk – Traditionally, coconut milk is used in place of heavy cream, so this plant-based milk can be replaced at this location. Lighten – For light desserts with low fat, use whole milk or 2% milk instead of cream. Replace the fresh ubes, cook for about 15 minutes, then mash with a fork. Let it cool completely, then put it in the fridge to cool and use it to make ice cream. Be careful, the fresh ube doesn’t have that strong flavor.

Easy way to make ube ice cream

Whip heavy cream onto the hard peak. Pour cold heavy whipped cream into a large mixing bowl and beat it with an electric hand mixer until a hard peak forms. Add condensed milk. Next, add sweetened condensed milk to the bowl and beat again high for 1-2 minutes.

Pro Tip: Whip heavy cream into hard peaks to incorporate air and create a creamy texture in your ice cream.

Steps to make ice cream: Whip the cream into a hard peak and mix with condensed milk.

Add a flavor of Ube and Vanilla. Next, add UBE Flavor Extract, UBE Powder and vanilla Extract to the ice cream base. Mix everything thoroughly and transfer to a chunk. Freeze. Cover the brochure pan thoroughly with plastic wrap and freeze for about 5 hours before serving.

Steps to make UBE Ice Cream: Add UBE Flavor, powder and vanilla extract, mix, then freeze until solidified.

Recipe Tips

Store milk and cream cold – use condensed milk and heavy cream immediately from the fridge to keep it as cold as possible. This helps UBE ice cream to acquire the right texture. Do not skip condensed milk. If the condensed milk is gone, you can easily make it yourself by simmering milk and sugar together. This ingredient is important for its sweetness and creaminess. Freeze for at least 5 hours – looks tasty, but make sure your UBE ice cream can be set for at least 5 hours. I promise it’s worth the wait!

FAQ

What is Ube?

If you’ve never heard of it before, Ube is a purple sweet potato born in the Philippines. It has a sweet taste that is described as close to vanilla, white chocolate, pistachio or lavender. Its natural sweetness and texture make it perfect for dessert.

No, Taro is different from ube. Taro is actually a root that is neither too sweet nor very purple. It’s good for even better food. The ube is a bright purple and naturally sweet sweet potato, making it a great addition to desserts like cupcakes, cakes and of course ice cream!
