We love this recipe because it really simplifies the process of making peanuts brittle. Eliminates most of the guesswork, and…it’s delicious! My mom first found this recipe in a Sharpe Carousel cookbook she had years ago. I’ve modified it a bit and always get great results. I love adding it to Christmas gift bags. It also makes a great hostess gift for holiday parties.

This recipe for Microwave Peanut Brittle is delicious! It’s so easy to make and has so many great reviews. Contains video.
Generously spray a baking sheet. Combine sugar, corn syrup, and salt in a 3-quart microwave-safe glass bowl. Stir in the peanuts and microwave until light brown. (About 9 to 10 minutes) Please note the timing as it varies depending on the microwave.
Stir twice in between (be careful not to burn yourself as it will be very hot). Add the remaining ingredients and mix. The mixture should be light and foamy. Quickly spread it out as thinly as possible on a greased baking sheet. Let cool and crumble. Approximately 1 pound of peanuts becomes brittle
