This is the easiest peanut brittle recipe since it is made in the microwave. Made with simple ingredients and ready in no time. You’ll want to add this recipe to your holiday baking pronto.

❤️ Why we love it

We love this recipe because it really simplifies the process of making peanuts brittle. Eliminates most of the guesswork, and…it’s delicious! My mom first found this recipe in a Sharpe Carousel cookbook she had years ago. I’ve modified it a bit and always get great results. I love adding it to Christmas gift bags. It also makes a great hostess gift for holiday parties.

You can easily swap peanuts for cashews or pecans. Many people have asked about replacing corn syrup with another ingredient, but unfortunately I haven’t found one that works well.

⭐Tips

Always use glass dishes to prepare brittle materials. This mixture will be very hot, so handle with extreme care. Let the bowl cool before washing. All microwave ovens have different wattage. Therefore, it is important to observe it. Please note that the peanut brittle mixture should be light brown in color.

Recipe variations

A variety of nuts work well in this recipe. Try pecans, almonds, or cashews. You can also drop chocolate chips on top as soon as you spread them out on a baking sheet. A few sprinkles of sea salt will add a deep salty flavor.

This recipe for Microwave Peanut Brittle is delicious! It’s so easy to make and has so many great reviews. Contains video.

1 cup white sugar1/2 cup light corn syrupa little salt1~1 1/2 cup raw shelled peanuts You can also use regular peanuts or pecans1 tablespoon butter or margarine1 1/2 teaspoon baking soda1 teaspoon vanilla

Generously spray a baking sheet. Combine sugar, corn syrup, and salt in a 3-quart microwave-safe glass bowl. Stir in the peanuts and microwave until light brown. (About 9 to 10 minutes) Please note the timing as it varies depending on the microwave.

Stir twice in between (be careful not to burn yourself as it will be very hot). Add the remaining ingredients and mix. The mixture should be light and foamy. Quickly spread it out as thinly as possible on a greased baking sheet. Let cool and crumble. Approximately 1 pound of peanuts becomes brittle
