We have always been big fans of homemade English muffins and thought the bread might be good too. Our judgment was correct. Especially the toasted one with butter and jelly was amazing. This recipe makes 2 loaves, but it doesn’t rise very much, so it’s perfect for feeding the whole family or giving a loaf to a neighbor.

English muffin bread that is easy to make and tastes just like an English muffin. Best toasted with butter and jelly.
Spray or grease 2 (9×5) loaf pans. Sprinkle the cornmeal on the bottom and sides of the pan. Combine 1/2 cup warm water, yeast, and sugar in a bowl. Stir. Let stand for 10 minutes or until yeast begins to bubble.
Combine flour, baking soda, and salt in a mixing bowl. Add yeast mixture and warm milk and mix with a spoon until ingredients are dissolved and moistened.
Divide the ingredients with a spoon and spoon half of the batter into each pan. Spread the dough horizontally into the mold. Use the back of a floured wooden spoon. If desired, you can sprinkle a little more cornmeal on top of the dough.
Cover and let rise in a warm place for 45 to 60 minutes. Heat the oven to 170 degrees, turn off the oven, cover the bread with a cloth and put it in the oven to rise.
The dough should double in size or come to the top of the mold. It probably won’t go any higher than the sides.
Once the dough has risen, heat the oven to 400 degrees and bake for 25-30 minutes until the top is brown.
Let cool for 10 minutes and remove from the pan. Let cool completely before slicing.
Makes 2 pieces of bread.
Bread is best toasted with your favorite jam or jelly.
