My favorite peach for the grill
When I’m baking peaches, I always go to the free stone varieties. They are sweet and hard, sliced cleanly without clinging to the pit (this makes preparations very easy). Some of my absolute favorites are early Amber, Golden Jubilee, Lucky 13, Nectar, Prince of July, and Snow in September.

I love buying balsamic glass at my local Kroger store or Trader Joe’s, but if I’m out, here’s how to make balsamic glass.
Cook the balsamic vinegar in a frying pan or small pot, add the sugar over medium heat until it boils, then immediately lower until it simmers, then cook until reduced for about 10-20 minutes. The vinegar should be coated on the back of the spoon when it is ready. Place in the fridge to cool.

Can I make this salad beforehand or store the leftovers later?
This salad is the best, but leftovers are kept in the fridge for up to 2 days. They prefer to remove fruit carefully, and do not continue to atrophy the greens.

Everything can be preassembled and then the peaches and lemons can be baked just before serving. Balsamic reductions are configured a week in advance and can be stored in the fridge.
Variations and replacements
If that’s what you’re holding in your hand, replace the peaches for a nectarine or grilled plum. Use burrata or goat cheese instead of mozzarella to get a creamy or tanjier bite. Do you have an arugula? Spinach, baby kale, or spring mix still tastes great. Add a handful of toasted almonds, walnuts or pine nuts and add extra crunch. Place in the fridge to cool.
Brush the lemon meat and peaches with olive oil.

Heat the grill to a medium high temperature and place the fruit on top of the gratin.
Cook for 1-3 minutes or until you see the mark, remove the lemon, then use tongs to carefully flip the peaches.
Place on a plate to cool. We put it in the fridge.
Instead of a bowl, a large salad platter is put into the greens, served with drizzle of olive oil, balsamic reductions, salt and pepper, and fruits are gathered together on top.
