Thinking about Oriana’s recipes

I love having a stash of homemade seasoning blends in my pantry. It makes life very easy on busy weekday nights. And this homemade Greek seasoning is something I reach for over and over again. It’s Herbie, it’s aromatic and quickly brings its fresh Mediterranean flavour to what I’m cooking. Whether you roast chicken thigh trays or throw potatoes into an air fryer, this blend is always in supply.
One of the biggest reasons I make my own seasoning is due to food allergies in our family. Store-buyed versions often sneak into obscure ingredients like “spices,” but that’s not what I feel comfortable with. When I mix my own, I know exactly what’s going on. There are no eggs, cross contamination, fillers, or strange additives either. Beautiful and flavorful herbs and spices, I trust.

Dried Oregano: The Star of the Show! Greek oregano is perfect if you can find it. It’s a little robust and has a peppery flavour. Dried Basil: Add soft, sweet herbal notes to balance the strong herbs. Garlic Powder: Brings warmth and depth without the moisture of fresh garlic. Onion Powder: A must for its delicious background flavor. Dried Dill: Adds fresh, tangy twist. This is what gives its classic Greek flavour. Dried Parsley: Bright and bright, brightening the mix with a touch of freshness. Black pepper: Adds hints of spices and rusticity. Salt (optional): I usually rule out this so I can control the salt level in each dish, but add a bit if necessary. Cinnamon: A pinch for a warm, slightly sweet undertone. It’s subtle, but it makes a difference! Nutmeg (optional): Small dashes add complexity without being overwhelmed. Dried Thyme: Rustic and slightly mint – Perfectly refill with oregano. Citric Acid (Optional): Mimic it by adding a little lemon brightness. When cooking instead, you can skip or squeeze fresh lemons.
This recipe blend is naturally free of eggs, dairy products, wheat/gluten, nuts, peanuts, soy, sesame, fish, shellfish, shellfish, and shellfish, and is suitable for most dietary needs. However, always double-check your spices. Some brands may process them in facilities that process allergens. I personally love the frontier cooperative, spicy, organic, and just organic.

Step 1 – Mix everything
Combine all the ingredients into a small food processor and process until thoroughly mixed.
Tip: I like to run seasoning ingredients through a small food processor. Because dry herbs can be a little thicker and a quick electric shock can make the texture even more fine and smooth.

Step 2 – Save later
Spoon the mix into an airtight container or spice jar. Store in a cool, dry place, like a pantry. It will remain fresh and flavorful for months – make sure to use a dry spoon when scooping it out so that it continues!

Mix well: Make sure all herbs and spices are combined evenly. I like to run seasoning ingredients through a small food processor. Use clean, dry cookware: Always scoop with a dry spoon to maintain a seasoning blend for longer. Label the jar: Write the name and date on the jar. It’s easy to forget when you have a few blends in your pantry.
Variations and additions
Spicy Kick: If your family likes a little heat, add a pinch of crushed red chili flakes. Smoky twist: Add a touch of smoked paprika for a smoked Mediterranean atmosphere. Lemon lovers’ version: Mix 1 teaspoon of lemon zest for fresh citrus brightness.
