How to make cream blue without a torch
Preheat the oven to 325 degrees. Place heavy cream and vanilla beans in a pot over medium heat.
Bring it to a boil and then remove from the heat. Let cool for 15 minutes and remove the vanilla bean.

Beat egg yolk and ½ cup sugar until smooth. (Reserve the remaining sugar.) Gradually pour the sugar egg mixture into the warm cream.

Whisk and pour into individual dishes in the ovenproof. * Place the filled dishes in a safe pot in the oven and fill about half of each dish with water.
Place on a middle oven rack and bake for 40 minutes. Carefully remove a very hot pot of water from the oven, let it cool for 10 minutes, then transfer the custard dish to the fridge to cool.

Refrigerate for at least 2 hours and 3 days. When ready to caramelize, place the dish on a heat-resistant surface and leave it warm for about 30 minutes.
Sprinkle 1 tablespoon of sugar on each dish and caramelize the sugar using a kitchen torch. A good technique is to go through the top of the dish until most of the sugar has melted, and let it cool, repeating it in other dishes.

Finish each dish with the second torch. Don’t be afraid to burn the top a little. Make sure the sugar is foaming well.
If you don’t have a kitchen torch and are not planning on purchasing, follow the tips below to caramelize the top with an oven broiler. Chill the finished creme brulee again until ready to prepare.
Move the top rack in the oven up as high as it goes. Place the ramekin in the oven on the top rack and turn on the broiler. Bake for 5-10 minutes, spin frequently to bake evenly. Take them out when they are foaming with a golden brown.
