Lemongrass adds a delicious aroma and a slight citrusy flavour to these spicy meatballs. They are served in a warm-flavored sauce with hints of warm, sour flavor, making it perfectly amazing. It can be served with fresh egg noodles (usually a supermarket salad section) and cooked directly in the sauce.

The citrus feng shui flavor of these meatballs is perfectly combined with the delicious soybeans in the noodles. It only takes 30 minutes on the table, making it a great weekday dinner!
I love the versatility of this dish. You can exchange minced pork for minced chicken, turkey and beef. Using fresh noodles means you don’t need an extra pan to boil. You can add it straight to the bread with meatballs. They soak that lovely sauce too. If you’re cooking for people who don’t like fever, you can rule out fresh chili and chili flakes. The flavor is still great, not spicy.

Minced pork – uses 10% fat, which is just right. It is low in fat and can dry meatballs.
Oils – Use neutral oils such as vegetables, sunflowers, and avocados.
Lemongrass – Very finely chopped using fresh lemongrass with the outer leaves removed. If you can’t find it, replace it with lemongrass paste (stick 2 teaspoons into one stem of lemongrass).
Coriander (Cilantro) – Uses coriander stems and sauce leaves carved into meatballs.

Mix all the meatball ingredients into a bowl and use your hands to form the mixture into walnut-sized meatballs. Next, saute the meatballs in oil until all sides are brown. Meanwhile, mix all the sauce ingredients into a bowl, pour the sauce into the pan with meatballs, and whisk before adding the noodles and cooking until hot. Stir in the coriander to turn off the heat, then split the noodles and meatballs between four bowls and topped with black sesame seeds.
Pro tips
If you don’t want to make your own meatballs, you can buy ready-made ones. Pork, turkey, chicken and beef meatballs all work with this recipe. Lemongrass can be added directly to the sauce, giving it a lemongrass flavour.

You can proceed with this in several ways by making the meatball mixture a few hours ahead and refrigerating them until they are ready to be cooked. You can also make the sauce mixture first and store it in an airtight container in the fridge.
I do not recommend making the whole dish first, as the noodles can get soaked when you reheat it.

Place all the meatball ingredients in a large bowl and mix by hand. Form the mixture into walnut-sized meatballs – you need to get about 20 meatballs.
500 g (1.1lb) pork mince, 1 tablespoon sesame oil, 1 egg, 2 tablespoons of bread crumbs, Two clove garlic, One cup of chopped inger, One stem of fresh lemongrass, 1 Chili pepper, ¼ salt, salt, ¼1¼ white pepper, 2 tablespoons finely chopped coriander stems
Heat 2 tablespoons of oil in a large frying pan over medium-high heat. Add meatballs and turn brown on all sides. This takes about 6-8 minutes.

Meanwhile, in a small bowl, mix soy sauce, lime juice, sugar, garlic, fish sauce, oyster sauce, chili flakes, cornflower and water.

Pour the mixture into the pan with meatballs. Beat for 2 minutes, then make a little space in the center of the pot and add the noodles. Place the noodles in the sauce and cook for 2-3 minutes until the noodles are hot.

Mix in the coriander and turn off the heat.

Divide the noodles between four bowls and add the meatballs, then topped with a scattered black sesame seeds.
