How to make healthy pumpkin oatmeal bread
Start by preheating the oven to 350°F (180°C). Lightly grease a 9 x 5 inch (23 x 13 cm) loaf pan and line with parchment paper for easy removal.
In a medium bowl, mix oat flour, all-purpose flour, salt, baking powder, baking soda, cinnamon, nutmeg, and ginger until evenly mixed. Let’s set it aside.
In a large mixing bowl, using a whisk or hand mixer, cream the eggs with the honey (or maple syrup), melted butter, and oil until smooth and slightly thickened. Add buttermilk and vanilla extract and mix until completely combined.
Then add the pumpkin puree and mix until the mixture is well mixed.
Gently add the dry flour mixture, being careful not to overmix. The dough should be smooth and slightly thick.
Pour the pumpkin batter into the prepared loaf pan and smooth out the surface. Sprinkle plenty of chopped walnuts to give it a crunchy texture.
Bake for 60 to 70 minutes or until bread is golden brown and a toothpick inserted in the center comes out clean. If it’s getting too brown, cover it with aluminum foil and continue baking until it’s browned.
Let the pumpkin bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
