If you’re craving a cozy autumn flavour for your morning coffee, this pumpkin spice syrup is the shortcut you need. It is smooth, lightly spiced and made with real pumpkin puree. A quick stove simmers will give you a syrup that tastes like autumn in a jar. And the best part? It is kept in the fridge for up to 2 weeks, so the coffee can feel like creating a latte shop every day.

Ingredient Notes + Variations
This syrup uses only a handful of simple ingredients, but each one is important. Together, they create a warm, sweet, spicy flavor that instantly upgrades your coffee, tea, or dessert.
Pumpkin puree – Use pure pumpkin puree rather than pie stuffing. Gives the syrup a rich body and flavor. Light Brown Sugar – Adds sweetness with a touch of molasses, which tastes deeper and richer than white sugar. Pumpkin Spice Condiments – This blend usually comes with cinnamon, nutmeg, ginger and cloves. You can swap it for your own homemade spice mix if you like. Vanilla Extract – Finish the flavor and enjoy a smooth, balanced taste.

For smoother syrups, they will be distorted via cheesecloth (optional)
Pro Tip: If you are planning on using pumpkin spice syrup to give as a pancake, dessert, oatmeal, baking or as a gift, skip the tension step. I hope the syrup is thickened for those recipes.
Step 4: Keep it and have fun

Pour into a jar and refrigerate. Shake before use to mix calming

Tips for success
Whisk frequently while it’s boiling. If used in coffee, it will distort due to the silky texture. Shake the jar before each use, as pumpkin puree can settle down to the bottom. For a stronger spice flavor, add cinnamon or nutmeg at the end.

FAQ
If the syrup is too thick to suit your taste, try putting a strain on it. If it is still too thick, add very light water and mix. If the syrup is too thin, you can simmer for another 2-3 minutes until the syrup is thick. Don’t forget that it gets thicker when it cools.
Separation is completely normal, especially if the syrup is not strained. Just do a good shake before using.
