This roast beef recipe is perfect served as a main dish or sliced ​​for hearty roast beef sandwiches. Serve with creamy horseradish sauce, au jus, or prime rib gravy.

This beef roast recipe is an authentic recipe that I’ve been trying for over 10 years. It provides all the flavor of a prime rib recipe without the hefty price tag.

The best part for roast beef

Boneless rump roast is a good option if you want a little more tenderness than other round cuts. Round roast, bottom round, round eye roast, and sirloin roast can also be used, but they are generally leaner and will not “melt in your mouth.”

How to make roast beef

Step 1: Combine roast beef seasonings in a small bowl.

Step 2: Make small slits all over the roast and insert a slice of garlic into each slit.

Step 3: Brush the roast with oil and rub the seasoning mixture evenly over the surface.

Step 4: Set up a roasting pan with liquid in the bottom and place the roast on a rack above the liquid.

Step 5: Cook roast until internal temperature reaches desired doneness. Remove and let rest before slicing.

Here are the internal temperatures and estimated cooking times when cooking beef roast recipes: The temperature is the same for both bone-in and boneless recipes.

When preparing beef, consider internal temperature and cooking time. The temperature will continue to rise while the roast is resting, so you should remove the beef from the heating element a few degrees before it reaches your desired doneness.

Safety Tip – USDA recommends a minimum internal temperature of 145°F. The above is an accurate visual guide to roast beef, even though I am using steak as a sample.

tips for success

Let the beef come to room temperature – Let the roast sit for 30-60 minutes before cooking. This will help it cook more evenly and prevent the center from getting cold.

Cook for temperature, not time – use a meat thermometer accurately. The roast will continue to cook while resting, so remove the roast about 5-10°F short of desired doneness.

Use a Meat Thermometer for Precise Cooking – Using a meat thermometer will ensure your roast beef is perfectly cooked every time. Insert into center of roast and remove meat 5-10°F below target temperature to allow carryover cooking.

Use the drippings to make the au jus – do not throw away the drippings from the pan. Perfect for making gravy, au jus, or a simple pan sauce to elevate your final dish.

3 lb boneless rump roast (*Note 1)2-3 cloves Garlic, thinly sliced1 tablespoon olive oil3 teaspoon kosher salt2 teaspoon drying thyme2 teaspoon dried rosemary1 teaspoon dried basil1 teaspoon garlic powder1 teaspoon black pepper2 cup beef stock or water

Instructions

Preheat oven to 375°F.

Combine salt, pepper, thyme, basil, rosemary, and garlic powder in a small bowl and set aside.

Make small cuts around the roast, about 1/2 inch deep. Insert a slice of garlic into each incision.

Brush roast with olive oil. Using your hands, spread the seasoning mixture evenly until set.

Add beef stock to bottom of roasting pan. Add a wire rack to the roasting pan and place the roast on the rack. Make sure the roast does not touch the beef stock.

Bake for 60 to 65 minutes or until the largest part of the roast reaches 130°F (for medium-rare). See the table below for other temperature and cooking time options.

Remove the roast from the oven, transfer to a cutting board, and cover loosely with foil. Let it rest for 10 minutes, then cut along the grain.

Note 1 – Upper sirloin loin, thigh, lower thigh, and upper thigh are also available.
Note 2 – Timings and temperatures are based on a 3 pound beef roast.
