This Roasted Butternut Squash Cream Soup is like a cozy, warming meal that will fill your kitchen with fall scents and comfort.

Cut a large golden butternut squash in half and roast until the edges are caramelized and sweet. Add red peppers, tomatoes, carrots, onions and garlic. Everything is slowly roasted together until tender and fragrant.

Once everything is golden and tender, the vegetables meld into a silky, vibrant soup that tastes as rich and satisfying as it looks.

It’s the kind of soup I love to make on a quiet afternoon when I want something nutritious and simple. All you need is a bowl of this, a slice of crusty bread, and maybe a cozy blanket nearby. Warm, flavorful and made with the simplest ingredients, it’s homemade comfort at its best.

How to make roasted butternut pumpkin soup

First, start by frying the vegetables. Preheat the oven to 200°C (400°F) and line a large baking sheet with parchment paper. Arrange the butternut squash halves on a sheet, cut side up. Cut the garlic bulb in half and place one half in the center cavity of the pumpkin.

Next, add the remaining vegetables, peppers, tomatoes, carrots, and onion wedges around the squash. Drizzle all over with olive oil and season with salt and pepper.

Roast for 50 to 60 minutes, stirring the vegetables halfway through, until caramelized on the edges and tender throughout. Remove from the oven and let cool slightly.

Once cool enough to handle, scoop out the flesh of the roasted pumpkin and squeeze the garlic from the skin.

Transfer all roasted vegetables to a large pot or blender. Add smoked paprika, dried thyme, and 4 1/2 cups broth. Blend until the mixture is completely smooth and velvety. If you prefer a thinner soup, add more broth until you reach your desired consistency.

Return the mixed soup to the heat and simmer gently for 10 minutes, stirring occasionally. Taste and adjust by adding more salt and pepper as needed.

Pour the hot soup into a bowl, stir in some cream and sprinkle with chili flakes or fresh herbs for garnish. Enjoy a comforting and satisfying meal with toasted sourdough bread or crunchy garlic croutons.
