The recipe starts by roasting the entire garlic head until it is soft and caramelized, bringing out a rich, mellow sweetness. While the garlic is roasting, start preparing the base of the soup using basic ingredients onions, garlic, dried herbs, potatoes and vegetable stocks.
If the potatoes are soft, add the roasted garlic and mix with the soup. Add an extra silky cream splash to make it satisfying like a spoonful of velvet.
Serve with crispy crouton on top and fresh herbs and Parmesan slices to balance it out cozy and delicious.
How to make roasted garlic cream soup
Start by preheating the oven to 400°F (200°C).
Prepare the roasted garlic by cutting the top of the garlic head to expose the cloves. Place each head on foil, cut sideways, drizzle with olive oil and wrap tightly in foil. Roast for 45 minutes or until the cloves are tender and caramelized.
In the meantime, start the soup. Heat the olive oil in a medium-sized soup pot over medium-high heat. Add the chopped onion and saute for about 5 minutes until soft.
Then chop the garlic and stir, cook for 1 minute, then add the potatoes, basil, thyme and oregano. Easy to mix and combine.
Add stock (vegetables or chicken) to the pan along with a pinch of salt and pepper. Cover the pot and simmer. Turn off the heat and cook for 15-20 minutes or until the potatoes are tender.
Once the garlic is roasted, let it cool a little. Squeeze the soft garlic cloves directly from the skin into the soup pot.
Blend the soup using a dip blender or countertop blender until smooth and creamy.
Finish by stirring the cream and tasting it for seasonings. Add salt and pepper if necessary.
Serve warmly with the soup and serve with bread croutons, parmesan slices and fresh herbs.
