This salsa chicken is something I crave every night! Golden cheese, tender rotisserie chicken and Zingy Salsa were all scooped up with crispy tortilla chips. It’s a great weekly lifesaver on the table in just 30 minutes, everything is made in one dish with minimal wash!
Why should I try this chicken salsa bake:
There is no raw meat to process – we go straight through the cooked rotisserie chicken. I’m not really tired of cutting raw meat, but I always prepare raw cooked prep. It is made in one dish. I use salsa for the sauce. People who don’t like salsa! Can be fresh, bottled, hot, mild, thick or smooth. Easily customize it with your favorite toppings and spice levels. You can also serve this whole dish on top of nachos if you like (making epic party dishes).
Heat the nachos in the oven tray for 5 minutes and arrange them into a large serving plate. Carefully spoon the cooked cheesy chicken salsa over the top (slips off the plate with the help of a spatula so that the melted cheese stays on top), sprinkle with onion, coriander, jalapeño and serve with sour cream.
It’s a great way to make this delicious dinner using leftovers.

Preheat the oven to 200°C fan/425°F/Gas Mark 7.
Remove all meat from the rotisserie chicken, shred it and place in a shallow roasting tray. Add red chili peppers, jalapeño, onion, oil, tomato puree and fajita seasonings. Throw it together and coat it all with fajita seasonings.

Pour it over the salsa and sprinkle with cheese. Bake in the oven for 15 minutes until the cheese melts and foams.
