Raspberry Simple Syrup brings all the tangy, fresh raspberry flavours without any nasty little seeds! In addition to your favorite drinks, it brings a natural raspberry flavour and colour.
Frozen or fresh raspberries
If you have some spares, you can use frozen raspberries or fresh ones! I grow raspberries in the summer and fall, but unfortunately I always use frozen in this recipe, as it’s not enough to chat, rather than the amount of syrup. They are simmered in water and soaked in all the flavors and colours. It’s very sweet because it makes this a simple syrup, but the slightly lemon adds a bit of brightness, which adds a lot of sugar. Use this syrup to taste drinks such as mocktails and cocktails.
Just a few ingredients
How to make it
Add all the ingredients to a medium pan and simmer for about 15 minutes.

Turn off the heat and allow the mixture to cool completely. This extra soaking step brings out as much raspberry flavor as possible.

Strain the mixture through a fine mesh strainer. If you really want a clear liquid, don’t push the pulp down too much.
storage
Store in a clean, sealed jar or container. This lasts for about two weeks in the fridge. If you want to keep it longer, you can freeze it. A useful trick is to freeze in individual partial sizes and pour into an ice cube container. Ready to add to your next drink.

In a small pot over medium heat, mix the raspberries, sugar, water and lemon juice. Simmer the mixture, stirring as the sugar melts.
Once the mixture starts to simmer, immediately lower the heat. Simmer for 10 minutes, stirring occasionally.
Balance a fine mesh strainer on top of the bowl and place the raspberry mixture tips. Drain completely. If you want a more clear liquid, do not push down the raspberry pulp.
Cool the syrup to room temperature and then pour into a clean glass jar or another airtight container.
Such fresh fruit syrup can be stored in a closed container refrigerator for up to two weeks. For long-term storage, the syrup can be frozen for up to 3 months.
