Peanut noodles made in the crockpot have an exotic flavor without waiting for the restaurant!

The tender chicken breast and vegetables are cooked slowly in creamy peanut sauce with ringin in creamy peanut sauce for a quick and delicious dinner!

Flavor: The ingredients may seem like a strange combination, but this dish is packed with a bold, flavourful flavour with a slightly sweet nut from peanut butter. Salsa and Sambal add just the right amount of kicks! Skill level: Very easy! Throw everything into the slow cooker and let them do the work. Preparation note: Save pasta water in case you need to thin the sauce in step 7. Budget Tips: Use up remaining chicken and vegetables from the fridge, or use frozen chili peppers and carrots to save money and reduce preparation time. Swap: Replace the chicken with shrimp or tofu or use almond butter instead of peanut butter. Spaghetti or rice noodles work well instead of ringin!

Chicken: This recipe uses boneless chicken breast, but boneless thighs can also be used. Salsa: Choose a brand of tomato-based salsa. I’ll use this. Peanut Butter: This recipe has been tested only with regular peanut butter, not all natural types to separate. Flavor: The soy sauce adds salty umami. If possible, use fresh lime juice with extra wedges to serve. Vegetables: Thin or shredded peppers and carrots add color and crunch to the peanut noodles. You can also throw diced garlic, snap peas, water chestnuts, small broccoli florets, or diced zucchini. Noodles: Ringin, spaghetti, or rice noodles work in this recipe.

Variations: Enjoy a deliciously flavored boost with top-slow cooker peanut noodles served with chopped coriander, green onions, flakes of red chili peppers, and splashes of chopped peanuts, sesame seeds and lime juice!

How to make slow cooker chicken peanut noodles

Whisk together the sauce ingredients. Cooked onions, chicken breast, carrots and peppers, covered in sauce for several hours in a slow cooker (the complete recipe below). Cook and drain the linguini. Shred the chicken and stir in the pan with cooked ringgini and sauce.

Serve with sesame seeds, green onions, or cilantro.

Storage and reheat leftovers

Keep remaining peanut noodles in a covered container inside the fridge for up to 4 days. Chill the peanut noodles, wrap them in a butter lettuce cup and enjoy a refreshing salad or reheated portion on the microwave or stove.

Slow Cooker Chicken Peanut Noodles

The tender shredded chicken in spicy peanut sauce is cooked slowly in ringgini noodles.

In a small frying pan, heat the oil over medium heat. Add the onions and cook until tender, about 3 minutes.

Add the onion to the bottom of a 6 QT slow cooker. Chicken top.

In a medium bowl, mix the sambal with salsa, peanut butter, soup, soy sauce, brown sugar, lime juice, and sambal if you are using sambal. Pour it into the chicken.

I’ll have carrots and peppers. Cover until chicken is cooked, 3½ to 4 hours or 2-3 hours high.

Transfer the chicken breast to a bowl and shred using two forks.

Cook the ringin according to the package instructions. Reserve 1 cup of pasta water.

Add the linguine and shredded chicken along with juice to a slow cooker. Mix well and add pasta water if necessary. Cover and let the pasta rest in a slow cooker for 2-3 minutes, thicken it before serving.

Garnish with coriander, green onions and peanuts if necessary.

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or catch a cold. Please do not freeze.
