Every spring, I get really excited about vegetables again. Asparagus appears, broccoli looks beautiful, and we begin to dream of fresh, bright ingredients that we want to put on the table. The only problem? I live with people who happily skip the vegetables and go straight to the bread basket. So over the years I’ve built a collection of vegetable side dishes that you can actually eat without any negotiation. When I want to scrub the bowl clean and someone asks, “Do you have more?” I reach for these recipes. We’re talking roasted sides with crispy edges, grill-ready favorites that taste like they came out at a restaurant, and creamy, delicious options that officially converted the veggie skeptics in our house. It’s a spring vegetable side dish worth making whether you’re making a weeknight dinner, a holiday meal, or a backyard cookout. Warning: They have a habit of disappearing before the main dish is eaten.
