These Thai Peanut Turkey Lettuce Wraps are fresh, flavorful, and perfect for an easy weeknight dinner. Crispy lettuce leaves are filled with fragrant ground turkey, crunchy vegetables, and creamy peanut sauce for a healthier meal that tastes better than takeout.

It’s quick to make, packed with texture and flavor, and is one of our favorite light summer dinners.

I love these turkey lettuce wraps! Years ago, I lived in Chicago and we all went out to PF Changs for dinner. Everyone was ordering lettuce wraps and I thought, “Meat on lettuce??…Yeah, that looks really delicious…well!” And when I tried it, it was amazing!!!!!!!!I thought it would be absolutely lame, but it was delicious.

This is one of my favorite meals to make in the summer when I need a light and easy meal.

What we need this summer are quick and easy recipes. It’s always been my summer jam, simple and delicious, like running to soccer practice or rushing from the pool. Here are the materials you need…

Ground turkey: Lean, flavorful, and quick to prepare, it makes an easy, high-protein filling. Celery: Adds fresh crunch and texture to the filling. Carrots: Add a little sweetness and color to the filling. Red peppers: Add sweetness, crunch, and bright flavor. Orange or yellow peppers also work well. Onions: Add depth and flavor to the turkey mixture. Garlic: Gives a bold, aromatic flavor to the filling. Sliced ​​Almonds: Add a great crunch and a little nutty flavor.

Saute vegetables: Add celery, carrots, bell peppers, onions, and garlic to the skillet and cook until soft and crisp.
