These melty vegan Rice Krispie Treats (also known as Vegan Rice Krispie Squares in some parts of Canada) are made with vegan marshmallows and plant-based butter. Just bake it on the stove for 10 minutes without baking and it will set perfectly every time.

These delicious treats are also kid-approved and perfect for school snacks, potluck desserts, or just a nostalgic snack.

Only 4-5 ingredients and no oven required. It’s chewy, buttery, and comes out beautifully when sliced. 100% kid-approved and vegan, it prepares in 10 minutes and comes together in about an hour.

Vegan Rice Krispie Treat Ingredients

Here’s what you’ll need (see recipe card below for quantities):

Main ingredients to make vegan rice krispies

Vegan butter (or refined coconut oil) Vegan marshmallows (I found Dandy’s or Trader Joe’s melts reliably) Vanilla extract. Use maple extract or almond extract for a slightly nutty flavor. Crispy Cereal (Check the label; Kellogg’s Rice Krispies are not vegan because they use non-vegan D3, so choose a vegan brand like Nature’s Path Organic or Whole Foods 365 brand) Optional: Dairy-free mini chocolate chips. How to make vegan rice crispy treats (aka vegan rice crispy squares)

Step-1-Process of melting butter
Step 2 - Process of toasting marshmallows with butter
Step 3 - Process - Add Rice - Crispy and mix
Step 4 - Spread the rice krispies evenly

Prepare the pan: Line a 9-by-13-inch pan with parchment paper.

Melt the butter: Melt the vegan butter in a large saucepan over low heat.

Marshmallows: Add marshmallows. Stir constantly until smooth.

Flavor: Add vanilla and stir. Remove from heat.

Cereal: Mix cereal until evenly coated. (If adding chips, let them cool for 1 to 2 minutes first to prevent them from melting.)

Press to set: Press into pan with oiled spatula. It should be firm, but not compressed. Chill for 1 hour (or refrigerate for about 20 minutes). slice.

Please press firmly. However, don’t compress it too much. If you compress it too much, the bar will become stiff as it cools.

Low heat = soft bars. It becomes hard when overheated.

Don’t overcrowd. Use light pressure to keep snacks chewy.

Brand matters. Vegan marshmallows come in a variety of varieties. Dandies/Trader Joe’s gives a consistent melt.

Butter: Refined coconut oil that provides a neutral flavor. Without marshmallows: 1/2 cup nut butter (I like to use almond or cashew butter) + 1/2 cup maple syrup (adjust amount based on consistency of filling). Cereal Swap: Puffed brown rice for less sweetness and a whole grain feel.

Chocolate Drizzle: Melt dark chocolate and drizzle after pressing. Peanut Butter: Mix 2 tablespoons of natural PB into the melted marshmallows. Coconut Crunch: Add 1/4 cup toasted shredded coconut. Holiday Sprinkles: Use seasonal vegan sprinkles on top.

Frequently Asked Questions about Vegan Rice Krispie Treats

Can it be made without marshmallows?

You can use 1/2 cup nut butter and 1/2 maple syrup instead, but the texture will be thicker.

Why are my snacks hard?

The higher the temperature, the faster the sugar will melt. Keep the stove on low and stir constantly.

Can I add protein powder?

Yes, just stir in 1-2 tablespoons before adding the cereal. If the mixture is too dry, add a little more marshmallow. Orgain Organic Powder is a vegan protein powder.
Start with a small amount and mix more depending on taste and consistency formation.

How long does setup take?

Leave it at room temperature for about an hour, or if you’re in a hurry, put it in the fridge for about 20 minutes.

Instructions

Step 1. Grease or line a 9×13-inch baking dish with parchment paper.

Step 2. Melt the vegan butter or coconut oil in a large saucepan over low heat.

Step 3. Add vegan marshmallows. Stir constantly until melted and smooth. Remains soft and stretchy at low temperatures.

Step 4. Add vanilla extract and stir.

Step 5. Remove from heat. Add the crispy rice cereal a little at a time, stirring until evenly coated.

Step 6. If using chocolate chips, fold in while the mixture is warm (not hot) so they hold their shape.

Step 7. Transfer mixture to prepared pan. Using a spatula coated with vegan butter or oil, press firmly and evenly.

Step 8. Cool completely for 1 hour. Slice into squares and enjoy.

Precautions

Tips for making the best vegan rice crispies:

When melting vegan marshmallows, melt over low heat. High temperatures can cause the sugar to solidify and form a hard stick. If the mixture feels dry, melt some extra marshmallows or add 1 tablespoon of vegan butter. Add almond or maple extract to your Rice Krispie treats for a nutty flavor.

Storage: Store in an airtight container at room temperature for 3 days or in the refrigerator for 1 week. You can also freeze it for up to 2 months. Thaw at room temperature before serving.
