Walking tacos are fun for state fairs and more, but sitting around the kitchen table and eating them makes them a little more casual. This walking taco casserole is just as tasty and just as easy, despite not being in the bag.

There is everything that makes walking tacos so delicious: seasoned ground beef, beans, llotel, corn, cheese, and crunchy fritos or doritos that make walking tacos so enjoyable. And of course, make sure to include your favorite tapcospping so that everyone can customize their parts with what they like.

Walking Taco Casserole

It’s quick and easy. If you like tacos on busy weekday nights, thank you for this walking taco casserole for the same reason. It’s ready in just over 30 minutes and you can prepare the necessary toppings while the casserole is baked. (If you like the idea of ​​one bread Mexican casserole, be sure to try my taco spasta or Mexican spaghetti too.)

Child-friendly. Tex-Mex hits most kids. What’s more, the novelty of eating a meal made with Fritos and Doritos actually guarantees that dinner will be eaten with zero complaints and pushbacks. (My taco cups and taco star key burgers are popular for the same reason.)

Ingredient Notes

Ground beef: I like to use lean ground beef (90/10), but if necessary, substitute turkey. Onion: Normal yellow cooked onions work well. The casserole should be finely cut to avoid large onions. Taco Seasoning: You can use store-bought packets or homemade taco seasonings. Pinto Beans: Rinse and drain the canned food thoroughly. If your family likes them, black beans will also work. Green chili pepper and diced tomatoes: also known as L’otel. You can purchase this type of canned tomato at various heat levels, so check the cans before adding them to your cart. I don’t want to be surprised by the baking hot and walking taco casserole. Corn: Canned corn is useful, so I use it here, but if you like it, you can swap it for frozen corn. There is no need to thaw first. Chips: Fritos and Doritos are classic choices for walking tacos, but tortilla chips also work. Split them into small (but not too small!) pieces, and the casserole is easy to eat. Cheese: I use shredded cheddar cheese, but the Mexican blend works as well, or try out pepper jack and kick a bit. Optional toppings: Sour cream, shredded lettuce, diced tomatoes, jalapeño, guacamole, salsa, black olives and more. If you like this casserole just as much as it has no toppings, that’s fine too! This casserole has a lot of flavor.

How to make a walking taco casserole

prepare. Preheat the oven to 350ºF and apply on a baking dish. You can also use an oven safe frying pan, such as cast iron (pictured). So you can cook the filling and bake the casserole in the same bread.

Cook the beef. Set the pan over medium heat and when it’s hot, add the ground beef and onions. Brown the beef and break it with a wooden spoon while cooking, draining excess fat if necessary.

Finish the filling. Mix the taco seasonings, beans, tomatoes, corn and water. Cook for 2-3 minutes, allowing the flavors to blend together. The filling should be slightly thicker. Stir in a cup of cheese and reserve half of the cheese on top of the casserole.

assemble. Transfer the filling to the prepared casserole dish (or leave it in the frying pan if it is safe for the oven). Add a uniform layer of chips on top and follow with the remaining cheese.

bake. Place the casserole in the oven and bake for about 15 minutes until the cheese melts and foams.

Finish it. Let the casserole cool for 5 minutes, then add your favorite toppings and serve.

Easy recipe variations

Veg it up. Add diced peppers to the onion and ground beef, and incorporate another vegetable into the mix. Make it meatless. Preheat the oven to 350°F and lightly apply it to a 9 x 13 inch baking dish. If necessary, prepare the whole meal using a large oven safe skillet (less cleanup!)

In a large frying pan over medium heat, add the ground beef and onions. The ground beef is cooked until browned and cooked, then crumbled while it is cooked. Remove excess fat if necessary.
