This Apple Pumpkin Fall Salad brings together everything I love about fall: crunchy apples, sweet roasted pumpkin, and a combination of comforting, earthy flavors. It’s also one of my favorite ways to use up leftover roasted pumpkin. Thinly sliced red onions add a gentle bite and balance the flavors. A handful of toasted nuts provides a crunchy texture, dried cranberries add a little tang, and crumbles of feta bring it all together with a creamy, salty touch.
