This Apple Pumpkin Fall Salad brings together everything I love about fall: crunchy apples, sweet roasted pumpkin, and a combination of comforting, earthy flavors. It’s also one of my favorite ways to use up leftover roasted pumpkin. Thinly sliced ​​red onions add a gentle bite and balance the flavors. A handful of toasted nuts provides a crunchy texture, dried cranberries add a little tang, and crumbles of feta bring it all together with a creamy, salty touch.

I love this simple, flavorful dressing and use it on most of my salads. It’s made with apple cider vinegar, a little honey or maple syrup, Dijon mustard, olive oil, and a small clove of garlic for warmth and depth. Blend everything without taking over.

A colorful salad with plenty of contrast, featuring red, orange, and green in one dish. Perfect for family dinners, lunches with friends, or as a side dish for fall gatherings.

How to make “Apple Pumpkin Autumn Salad”.

First, start by preparing the dressing. In a small bowl, combine apple cider vinegar, honey or maple syrup, Dijon mustard, olive oil, minced garlic, salt, and pepper. Whisk until completely emulsified and smooth. Let’s set it aside.

Next, assemble the salad. In a large bowl, combine sliced ​​apples, roasted pumpkin cubes, roasted nuts, dried cranberries, red onion, feta cheese, and mixed greens.

Pour the prepared dressing over the salad ingredients and gently toss to coat evenly and add flavor to each bite.

3 tablespoon Extra virgin olive oil (45ml)1 tablespoon Lemon juice (15ml)2 tablespoon Apple cider vinegar (30g)1 garlic chopped1/2 teaspoon (3g) Dijon mustard1 teaspoon Honey (7g)salt and pepper

Instructions

In a small bowl, combine apple cider vinegar, honey/maple, Dijon, olive oil, minced garlic, salt, and pepper until emulsified.

Cut the apple into thin slices.

Cut the roasted pumpkin into small cubes.

In a large bowl, combine apple slices, pumpkin cubes, toasted nuts, dried cranberries, red onion, feta cheese, and vegetables.

Pour the dressing over the salad and toss gently to coat.

Sprinkle with more crumbled feta cheese and serve immediately.
