Mushroom pasta

The creamy mushroom pasta is made with your favorite varieties of mushrooms, heavy cream, garlic, shallots and parmesan cheese. The combination is gods. This simple yet elegant meal is perfect for busy weekday and date nights.

Key Ingredients and Alternatives

The key ingredients for making a mushroom pasta recipe are: See the recipe cards below for all ingredients.

Noodles – Most pasta noodles work with this recipe, but long pasta is perfect. Think fettchin, bukatini, lingin, or angel hair pasta. Mushrooms – Any of these mushrooms work well: white button mushrooms, cremini mushrooms (baby velau), oyster mushrooms, shiitake mushrooms, portobello mushrooms, and king oyster mushrooms. Here’s how to clean mushrooms:

Heavy Cream – This is what makes the sauce “creamy.” It can fit in milk or half of the half, but it’s not so creamy. Dried White Wine – This adds flavor to the pasta and helps to degass the pot, but allows you to smoke more chicken. Parmesan Cheese – Instead of purchasing a shredded type, you will score your own cheese. Lemon Juice – In the test, half of the tester liked to add a little lemon juice to the edges, while the other half didn’t like it. Try both methods and see which one you prefer.

Many of these ingredients are also used to make mushroom gravy.

How to make creamy mushroom pasta

This is a very simple and easy pasta recipe, so you don’t take photos of the very basic steps. Instead, here we present two photos that show how the mushrooms should look after they turn brown and the frying pan can combine all the ingredients.

Possible additions

This mushroom cream sauce is great in its own right, but there are several popular variations.

Chicken and Mushroom Pasta – Add cooked chicken to add more protein.

Spinach and Mushroom Pasta – Add fresh spinach towards the end of cooking to boost nutrition.

Provide suggestions

Here are some ideas for side dishes with pasta along with mushrooms and with garlic bread, green salad, peas, spinach, asparagus or Brussels sprouts.

I’ll drink a pairing

There are some wines that are well combined with creamy mushroom pasta, such as Pinot Noir, Chianti, Merlot, Chardonnay or my favorite champagne. The champagne adds a gorgeous touch, and the foam cuts through the richness of the cream sauce.

8 Oz Dried pasta (*Note 1)2 TBSP Olive oil, split3 TBSP Unsalted butter, split16 Oz Mushrooms, slices½ Small spoons salt1 big Garlic cloves, finely chopped1 TBSP Chop shallots¾ cup Heavy cream½ cup dry white wine (*Note 2)½ cup Low Sodium Chicken Stock½ Small spoons Worcestershire sauce½ cup Grated Parmesan cheese (*Note 3)½ Small spoons Black pepperOptional Garnish: parsley and extra parmesan

Instructions

Cook the mushroom sauce

Preheat a large skillet over medium heat and add 1 tablespoon of extra virgin olive oil and 1 tablespoon of butter. Once it’s melted, add half of the mushroom to a single layer. Do not throw mushrooms until the edges begin to turn brown. 2-3 minutes. Throw the mushrooms, cook for another 3-4 minutes, and throw them occasionally.

Using a slotted spoon, transfer the cooked mushrooms to a plate. Sprinkle half of the salt.

Repeat the above process with the other half of the mushrooms.

Add all the cooked mushrooms to the skillet. Add shallots and cook, stirring frequently, until translucent and tender, about 2 minutes. Add garlic and cook for a fragrant period of about 30-60 seconds.

Add the wine and stir and scrape the bottom of the frying pan. Simmer for 1-2 minutes until the wine smells fade away.

Add heavy cream, chicken soup, Worcestershire sauce, remaining salt and black pepper. Stir and simmer for 2 minutes.

Lower the heat and add pasta noodles. Toss and cook for 2-3 minutes until the sauce starts to thicken. If the pasta appears to be too dry, add 1/4 cup of reserved pasta water.

Remove the pan from the heat and toss the remaining butter. Taste and season with more salt.

Transfer to individual serving bowls and garnish with Parmesan cheese and fresh parsley with more Parmesan cheese. Serve immediately for the best texture.

Note

Note 1 – Long pasta noodles work. Fettchin, linguine, or angel hair pasta makes great options.
Note 2 – If you don’t have or want to use wine, sub-sub the chicken soup equally.
Note 3 – Shredded and grated Parmesan cheese won’t melt properly, so stick to fresh shredded cheese.
Remains and Storage – Store leftovers in a fridge airtight container for up to 3 days.
