My cooking philosophy is “simple doesn’t mean boring,” and I love fancy rice pilaf. A simple rice pilaf with white rice and chicken soup? I want to make risotto because I’m bored. But please tell me about a blend of brown rice and wild rice. I’m interested now. Use a premium rice blend with red rice, black japonica, and sweet rice. I will do my best.
Next, add some dried fruit, nuts, and green onions and mix to create a side dish that is easy to replace.
As with many dishes, the pressure cooker is my secret weapon for brown rice. Brown rice will last forever on the stove. Using a pressure cooker, this recipe can be completed in 40 minutes from start to finish.

Ingredient Notes and Substitutes
Brown Rice and Wild Rice Blend: The better the rice blend, the better, as long as the ingredient list includes brown rice and wild rice. Many of these blends call themselves “wild rice blends,” but they contain a lot of brown rice. My favorites are Lundberg Wild Blend and Rice Select Royal Blend. Various fruits, nuts and garnishes: cranberries can be replaced with small dried fruits. Raisins, golden raisins, and currants all work too. You can use other nuts for the almonds, but I like pecans or pistachios instead. If you don’t need green onions, substitute chopped parsley or cilantro.
You can also skip the fruit, nuts, and green onions if you really don’t want them. The recipe works fine. Soup: I like chicken or vegetable broth to bring richness to the dish, but you can replace the broth with water if you like. Vegetarian/vegan version: Use olive oil instead of butter and vegetable broth instead of chicken broth. (preferably homemade vegetable soup)
FAQ
Does this recipe cause a burn warning? I have never had a burn warning when cooking wild rice or brown rice blends. (White rice is tricky and can cause burn warnings, brown rice does not.)
Can I use 100% wild rice instead of a blend? No, wild rice is cooked differently than a blend of wild rice and brown rice.
What should I do if I only have “quick-cook” blended rice? Do not use it according to these instructions. If you pressure cook it for 20 minutes, it will turn mushy. Cook the seasoned rice according to package directions, then stir in the cranberries, almonds, and green onions.
Does blended rice need to be washed? No, blended rice is whole grain and does not have surface starches that need to be washed away (like white rice).

1 tablespoon butter
2 cups Blend of brown rice and wild rice
1 1/2 cups Chicken soup (preferably homemade chicken soup)
1 cup water (or more soup)
1/2 teaspoon fine sea salt
1/2 cup dried cranberries
1/4 cup Thinly sliced green onions (approx. 2 green onion)
2 tablespoons Shredded almonds Add more cranberries, green onions, and almonds for garnish.
Instructions
Prepare the rice and cranberries. Melt the butter in the Instant Pot set to sauté mode (high) (medium-high heat on stovetop PC). Stir the rice in the pot and brush with melted butter. Stir in the soup and water, sprinkle with salt, and add the dried cranberries. Pressure cook rice for 20 minutes with natural pressure release: Lock the lid and cook on high pressure for 20 minutes on an Instant Pot or other electric PC or 16 minutes on a stovetop PC. (Use manual or pressure cooking mode on your Instant Pot). Let it sit for about 15 minutes until the pressure naturally drops. (If there’s still some pressure left after 15 minutes and you’re in a hurry, you can quickly release any remaining pressure.) Add any additional ingredients, stir, and enjoy: Unlock the lid and tilt it toward you to avoid hot steam. Add green onions and almonds and mix. Scoop the rice from the pot into a bowl, fluff it up with a fork, and sprinkle the extra cranberries, scallions, and almonds on top. Serve and enjoy!
