How to make roasted butternut pumpkin soup
First, start by frying the vegetables. Preheat the oven to 200°C (400°F) and line a large baking sheet with parchment paper. Arrange the butternut squash halves on a sheet, cut side up. Cut the garlic bulb in half and place one half in the center cavity of the pumpkin.
Next, add the remaining vegetables, peppers, tomatoes, carrots, and onion wedges around the squash. Drizzle all over with olive oil and season with salt and pepper.
Roast for 50 to 60 minutes, stirring the vegetables halfway through, until caramelized on the edges and tender throughout. Remove from the oven and let cool slightly.
Once cool enough to handle, scoop out the flesh of the roasted pumpkin and squeeze the garlic from the skin.
Transfer all roasted vegetables to a large pot or blender. Add smoked paprika, dried thyme, and 4 1/2 cups broth. Blend until the mixture is completely smooth and velvety. If you prefer a thinner soup, add more broth until you reach your desired consistency.
