This stir-fried lentils is one of those meals that combine effortlessly, yet taste like they put in more effort. It’s packed with flavor and texture. It’s a high protein side dish and seriously satisfying.

It all starts with cooking the lentils until they are tender, but canned lentils work the same way if they are shorter. Vegetables such as onions, garlic, ginger, red peppers and sweet carrots are fryed together over medium heat to fill your kitchen with an attractive aroma. Feel free toss other vegetables like broccoli and shredded cabbage to give it a flavour and texture.

The real magic happens when lentils participate in the mix and soak all the rich Umami goodness from the soy and oyster sauce. The final drizzle of sesame oil brings it all together and gives the dish a distinctive nutty, flavorful sweet finish.

It’s heartfelt enough to stand on its own, but it pairs beautifully with meat and fish. Simple, flavorful and packed with nutrients, this stir-fry proves that lentils aren’t boring.

How to stir-fry lentils

Rinse the green lentils under cold running water, cook in a salted pot, and cook in about 15-20 minutes until tender. Drain well and set aside.

Next, heat the oil over a large skillet or medium high heat. Swirl the oil to evenly coat the bread.

Add vegetables, peppers, carrots, onion, garlic and ginger for a few minutes and stir continuously to cook evenly, retaining vibrant colours and slight crunches.

Add the cooked lentils to the pan and gently toss them with vegetables. Pour in soy sauce, oyster sauce and sesame oil and stir well to coat everything evenly with a flavorful sauce.

You can cook for an additional minute and melt the flavors together. Taste and adjust the seasonings as needed.

Serve immediately and serve with chopped green onions to give it an extra flavour and texture. Enjoy it as a nutritious main dish or as a heartfelt side!
