Cook spinach in the microwave

Wash the spinach in cold water and moisten it a little.

Place in a microwave safe bowl, cover with a safe plate and cover the microwave for 3 minutes.

Remove, transfer to a colander and press to release the water.

Chop the cutting board roughly and push the colander again to remove any excess moisture.

Cheers to the pine nuts

Heat a large frying pan over medium heat. Add the pine nuts and toast for 2-3 minutes, stirring frequently until golden and smelling.

Remove them from the skillet and set aside.

Finish with pine nuts and feta
