The secret ingredient for better-tasting brownies
There are many ways to make brownies delicious, browned butter is one example, but my secret is simple. Just before baking the brownies, mix in the chopped chocolate. With just a few simple additions, you’ll have a deliciously rich and addicting treat.
Purchase 1.5-ounce high-quality chocolate bars for an 8-by-8-inch brownie pan. To enjoy the deep, rich chocolate flavor, choose one with a cacao content of 60% to 70%.
Unwrap and place on a cutting board. Use a large beef knife to cut into pieces or irregular pieces. Don’t focus on cutting perfectly or evenly, as uniformity is not needed or desired here. Stir the chocolate into the batter quickly and gently a few times, then scrape the batter into the pan and bake.
Why is this secret so good?
No one knows that I put extra chocolate in my brownies (except my daughter, who is mysteriously always around when I’m baking). This is because most of the chopped chocolate will disappear when baked.
Cutting the chocolate into smaller pieces gives it a larger surface area than chocolate chips, which makes it easier to melt into the brownie when heated. With no extra effort, you’ll end up with little pockets of delicious chocolate for incredibly decadent brownies.
